Ingredients & Directions
1 Egg
3 tb Unsalted butter
1/4 c Caster sugar
3/4 c Desiccated coconut
3/4 c Cornflour
1 ts Vanilla essence
1. Pre-heat oven to 180deg.C. Lightly grease a biscuit tray.
2. Beat egg, butter and sugar until light and fluffy. Add coconut,
cornflour and vanilla and fold through until well mixed.
3. Drop spoonsful of mixture onto tray and bake for 10-15 minutes.
Store in airtight container when cold.
