2 1/2 lb Green Tomatoes
1/2 c Cornstarch — OR 3 TBSP
Ground tap
1 tb Grated lemon rind
1 ts Cinnamon — OR coriander
Slice tomatoes 1/8″ thick and toss with sugar, cornstarch (or tapioca),
lemon rind, and spice. Spread in pre-baked pie shell, top with unbaked
crust, brush with egg wash and bake 375 degrees until filling bubbles up,
approx 1 hour
