Sauerkraut Chocolate Cake

Ingredients & Directions


1 cn Sauerkraut,14oz; 2 ts Vanilla
-rinse & drain well 1/2 c Cocoa powder
-Squeeze liquid from 1 ts Baking powder
-sauerkraut then chop finely 1 ts Baking soda
-DO NOT ADD UNTIL END 3/4 ts -salt
2/3 c Butter 2 1/4 c Flour
1 1/2 c Sugar 1 c -cold water
3 Eggs

Cream butter and sugar until fluffy. Add eggs one at a time. Beat
well after each. Beat in vanilla. Combine cocoa, baking powder,
baking soda and salt. Mix into butter mix. Alternately add flour and
water to batter. Begin and end with flour.
Stir in chopped sauerkraut.
Preheat oven to 350 ?F. Use a greased 13×9 inch pan or two 7 inch
round pans. Bake for 30 minutes. Frost with chocolate icing and
serve at room temperature.
