Food Cake Portion Dessert

Oatmeal Cake #2

Ingredients & Directions


1 c Oatmeal
1 1/4 c Boiling water
1/2 c Margarine
1 c Brown sugar
1 c White sugar
2 Eggs
1 1/2 c Flour
1 ts Each baking soda and
-cinnamon
1/2 ts Salt

TOPPING
6 tb Margarine; melted
1/4 c Evaporated milk
1 c Coconut
1 c Chopped nuts
1/2 c Brown sugar
1 ts Vanilla

Mix oatmeat & boiling water, let stand 30 minutes. Cream margarine &
sugars. Add 2 eggs & oatmeal mixture. Sift flour, baking soda, cinnamon &
salt & add to creamed mixture. Bake for 35 minutes at 350 on long sheet
cake pan. Mix topping ingredients & spread over cake when done; place under
broiler until bubbly.
