Ingredients & Directions


1 c Quick oatmeal
1 1/2 c Boiling water
1 c White sugar
1/2 c Shortening
1 ts Cinnamon
1 c Brown sugar
2 Eggs
1 1/2 c Flour
1 ts Soda

TOPPING
6 tb Melted butter
1/4 c Milk
1/4 c Nuts
3/4 c Brown sugar
1 c Shredded coconut
1 ts Vanilla

Hope this is what you are looking for it is from Something’s Cooking with
the South Dakota Lions and Lionesses cookbook.

Combine and cool: 1 cup quick oatmeal, 1 1/2 cups boiling water. Mix sugar,
shortening, cinnamon, brown sugar and eggs in separate bowl. Mix
thoroughly and then add 1 1/2 cups flour and 1 teaspoon soda. Add oatmeal
mixture. Pour into a 9 x 13″ greased and floured cake pan and bake 40 to 45
minutes at 350 degrees F. Test with toothpick.

Topping: Combine topping ingredients and spread on cake while warm then
brown under broiler.
