Muesli Pancakes

Ingredients & Directions


60 g Medium oatflakes
1 lg Egg; beaten
150 ml Milk
1 pn Salt
2 ts Baking powder
6 Pieces apricot; dried
2 Pieces pear; dried
2 tb Raisins
1 tb Nuts; chopped
1 Apple; grated
Butter for greasing
Icing sugar

Mix all the ingredients together and let the mixture rest for approximately
30-60 minutes for the oatflakes to swell.

Heat a frying pan or griddle and grease with a little butter. Drop the
batter in by the dessert spoonful, about 3 at a time. Cook slowly until the
edge starts to set, approximately 3 minutes, then turn over and cook the
other side until lightly browned. Keep warm.

Repeat until the mixture is finished.

Serve immediately with a dusting of icing sugar.
